Feed a chicken “a diet rich in algae, flax seed or fish oil” and — voila! — its eggs profile higher in heart-healthy omega-3s, as reported by Katy McLaughin in The Wall Street Journal. Give that chicken some marigold extract and — presto! — its eggs boast higher levels of lutein, “a nutrient that is good for eye health.”
Put that chicken on a vegetarian diet and its eggs will be a little lower in cholesterol; let it run free and, uh, you’ll have a happier chicken (and happier animal rights folks, too, of course). Play it some Barry White and … ? Point is, a whole gaggle of egg marketers have figured out how to re-position the once-deadly egg as something approaching a health food: “Gold Circle Farms, for example, sells a cage-free, omega-3, all-vegetarian feed egg that has six times as much vitamin E as the average egg.”
