Nation's Restaurant News

April 21, 2016By Mike Hohnen

No matter how you measure sales in your tableside-service restaurant, such as by check average, sales per hour or revenue per customer, a different way of managing sales is by the square foot. Do the math:

Bitter times for French wines

April 13, 2022By Mike Hohnen

Wine consumption in France is losing out to a growing taste for beer and a newfound responsibility behind the wheel. The rest of the world’s winemakers are catching up to and surpassing French standards. Government legislation and decades-old self-imposed regional quality standards have put many French winemakers at a competitive disadvantage.

High-tech Linc tag is Eagles' cash card

April 13, 2022By Mike Hohnen

https://www.philly.com/mld/inquirer/business/9258077.htm
PowerPay is like an E-Z Pass for sports fans, a cashless technology for buying beer and food in a hurry. Starting with tonight’s soccer match at Lincoln Financial Field, fans can get a free, thin plastic tag that has an Eagles logo printed on the outside and a tiny antenna and radio-frequency identification chip embedded inside. It can be used like cash at the more than 300 permanent concession stands at the Linc.

Fans can link the tag to any existing credit card, but if a fan also signs up for the Eagles’ new Extra Points MasterCard, each dollar spent accumulates one point toward prizes, such as autographed jerseys or even dinner with a player. And 3,000 of those new MasterCards will be available with the chip technology built in, eliminating the need for the separate tag. They’ll go first-come, first-served at the stadium or at www.eaglesextrapoints.com

Do you have a good press kit??

April 21, 2016By Mike Hohnen

The key to working with the press is the relationships you build. If you’re working in your local area only, and will be approaching the same editors, send a short note of introduction on who you are, with your press kit. Let them know you are available for interviews and to help them out in a pinch. If they need to photograph a dish for an upcoming spread, offer to create that dish for them. The more accessible you are, the more they may call you, giving you on-going publicity and exposure.

Besides new stores, Starbucks has other plans to expand

June 24, 2004By Mike Hohnen

Starbuck’s executives say they are well ahead of schedule when it comes to promoting brand awareness, and although the coffee store plans to open 1,300 new stores this year, there are other expansion plans in the works. Starbucks plans to add CD-burners to some of its stores, expand Wi-Fi hot spots and move into other “concierge” type services.

But they also have their imitators….

What is your occupancy?

June 23, 2004By Mike Hohnen

That may be a strange question … but it is an interesting way to think about your business potential. To illustrate, consider a 120-seat restaurant serving lunch and dinner from 11:00am until 10:00pm. On an average day, they do 200 lunches and 200 dinners. That sounds pretty good — and it is certainly respectable — but let’s look at it again from the aspect of occupancy. What percentage of time is there a guest actually sitting in each chair in the dining room? [Read more…] about What is your occupancy?

Trading Up Trends

June 22, 2004By Mike Hohnen

Silverstein and Fiske continue to make their case that, “… it is clear consumers around the world are willing to pay a premium for goods they believe deliver better quality and higher performance, along with emotional benefits, than do conventional goods.

Research indicates the Trading Up phenomenon is not limited to the United States. Japan, United Kingdom, Spain, Scandinavia, and most other Northern European countries are also experiencing similar shifts in consumers trading up to new luxury goods.

Furthermore, the authors contend, Consumers today have more discretionary income, more cash, more product knowledge and more sophisticated tastes, and have far more product choice than ever before. We believe that consumers will only grow more discriminating in their purchases. They will trade up and trade down, with great care, in every category of goods.”
